CABRÓN Mexican Parrilla arrived in Madrid with a clear idea: to make uncompromising Mexican cuisine and place the grill at the center of everything. From the name — more an attitude than a provocation — the restaurant makes it clear that there is no folklore or postcard-like décor here.
CABRÓN is not trying to please everyone; it wants to leave an impression. Opened in March 2024 at Castelló 24, right in the heart of Salamanca district, the project takes its place in one of the city’s most active culinary enclaves. The setting suits a proposal that combines technique, fire, and respect for Mexican roots, without solemnity or forced speeches.
In the kitchen, the grill leads the way. There are guacamoles, aguachiles, and ceviches, but also ingredients handled with precision: skirt steak, flame-grilled leek, and veal shank cooked at low temperature and served for taquear in corn tortillas. Tacos are one of the restaurant’s main pillars, with standout references such as the Taco CABRÓN, made with flame-grilled beef fillet and awarded 3rd place in Spain at the III Spanish Taco Championship and 2nd place in the Community of Madrid, alongside options such as breaded fish taco or barbacoa beef cheek taco.
The experience is completed by a central bar that organizes the space: neon lights, tiles, graphic elements, and bare tables. From there comes a signature cocktail program designed to accompany an intense cuisine: margaritas “cabronas” with jalapeño syrup, micheladas, and reinterpreted classics.
On the sweet side, standout homemade desserts include the tarta de queso con cajeta and the tiramisú de café de olla, designed for sharing and to close the experience with Mexican character.

CABRÓN Mexican Parrilla is open from Wednesday to Sunday, with lunch and dinner service that stretches on with music, drinks, and a lively atmosphere. On Sundays, the restaurant leans into a brunch with its own menu of bold Mexican breakfasts, designed as a unique moment, relaxed and unhurried.
More than a Mexican restaurant in Madrid, CABRÓN is an attitude. Tradition reinterpreted over fire, tequila served without hesitation, and a personality that does not follow trends: it cooks them on its own terms.
